Nope. If you delete known.met, your client won't remember your files. It will be like you're sharing new files.
If you don't delete known.met and move files in and out of the shared folders (which btw does not accomplish what quickone wants), the files won't be rehashed provided the file system has remained the same throughout. However, if you move files from a FAT/FAT32 partition to NTFS and back (or vice versa), the files will be rehashed. This is because the client checks the file dates, and NTFS keeps records in a different format from FAT or FAT32.
