Because rips can be different sizes! There is no such thing as "only one rip possible" from a given source. A rip is a recode of the original. They can be different resolutions (1080p, 720p), different bitrates (bits used per second) and codecs (H265, H264; different efficiencies in encoding).
Whereas a Remux should be a consistent size for a given source (a specific BluRay release), as it copies it without recoding
