I do not even use the Chapters option! Just including the parts I want in order, identifying audio and subtitle languages, and audio delays.

Well, that's all a matter of taste. I am so used to the current user interface and I even don't now this 10 yo version.

Does it work with gMKVExtractGUI?

I do not know. I have seen that recommended with MKVToolNix but never downloaded it to see what it does!

I think I tried MKVCleaver once but uninstalled it when it was not applicable for what I wanted.

...to see what it does
It extracts single tracks (audio, subtitles...) from a MKV file.

DOH! I forgot that I have used MKVExtractGUI (without the "g") for just that. I guess I did not have much use for it because I did not generally want the parts independently from a whole. With video or audio I would recombine them from the source using MKVmerge/MKVToolnix, and for subtitles I would extract them with SubtitleEdit.

I am sure I am not thinking of circumstances where I would want just the parts, but maybe when I do I will remember this!
