I've been using hide.me for five months now, so could try to answer a few of your questions.
First, I too was able to use Dynamic Port Forwarding successfully. Prior to this setting, I've been stuck on LowID, but I think this fixed it (I can't quite tell in eMule, but the Server list has the Kad network as Open, although it hasn't been connecting to the eD2k network for a while now).
Second, regarding the free version-according to the hide.me website, Dynamic Port Forwarding is only available to Premium users. Also, the free version limits you to 10GB per month. I used the free version in April when I joined before upgrading to Premium, so that limit was in effect back then.
Third, as far as speeds with eMule go, they're all over the place. Sometimes, it gets 1-2MB per second; other times, only 5KB per second. Sometimes, it connects to all sources for a file; other times, it doesn't.
