Which spam are you talking about? General email, messages in eMule, IRC?

Ah! You mean general email, not p2p related. There are dozens of apps that do this; your choice will depend on
1. how much spam you get (messages per day)
2. how much you want the filtering app to do (rule based filtering, self learning artificial intelligence...)
I get about 50 a day (not a lot), but can't be bothered to teach my preferences to an AI app. So I use a small app that downloads just the email headers, then I take a look and delete those I don't want. Then I can download the rest with Outlook Express as usual.
I don't think this approach will be as manageable if you get several hundred or even thousands of spam emails every day.
