Maria makes creamy Mac-an-Cheese! Has potato chips! Smooth an salty :o

Creamy and cheesy are the two words that best describe this delicious mac-n-cheese. This dish will not only become a staple at your Thanksgiving Day table but really any night of the week. Add your little touch too by adding any type of protein or veggie to this dish.

Serves: 8
Prep: 10 minutes
Cook: 14 minutes
Bake: 20 minutes

Ingredients:
1 lb Pasta (capatavi)
4 cups Whole Milk
6 Tbsp Butter
6 Tbsp Flour
1 Tbsp Ground Mustard
1/8 tsp Freshly Grated Nutmeg
3 cups Cheddar Cheese, shredded
1 cup Parmesan Cheese, shredded
1 Egg, beaten
Salt and Pepper, to taste
1/2 cup Orignal Potato Chips, crushed

Directions:
Preheat oven to 350˚.

In a large pot bring water up to boil and cook pasta according to package instructions. In a sauce pan warm up milk over medium-low heat.

While pasta is cooking and milk is warming, place a separate pan over medium heat and add in butter. Allow butter to melt and then add in flour, continue to whisk those ingredients for 2 minutes. Slowly add the warm milk to the butter and flour mixture and continue to whisk well. Then add in the ground mustard and fresh nutmeg, allow for sauce to thicken slightly which will take about 10 minutes.

Once sauce has thickened add in the shredded cheese and stir well to combine. Take a moment to taste the sauce then season accordingly with salt and pepper. Next, temper the egg then add into the sauce mixture.

Drain the pasta and add into the cheesy sauce mixture; stir together then pour into a baking dish. Sprinkle chips over top then place into the oven for 20 minutes, remove and allow to rest for 10 minutes. Serve and enjoy!

Wow, I never though of it like that, but your right! Technically it is a educational documentary short. :D

I didn't really expand, but some of the recipes Maria makes with her mom are super easy and taste great. I am dying to try the anti-pasta bites where they cook salami in muffin pans to create cups and fill them with the anti-pasta salad veggies, cheese, and dressing. :drool

OK FLMers, having never tried the sausage of a turkey, I opened my mind.....this was great! TIP: wrap your baking sheet with aluminum foil, and put down a cooling rack. Put peppers w/bacon on that. This way the fat and excess cheese does not burn to your finished product. Also I cooked longer for crispier bacon. I have made this from their recipe.

Maria makes Jalapeño Poppers w/ Turkey Sausage

The crunch of the pepper with the creamy filling and the smoky bacon over top makes this the ultimate tailgating recipe.

Makes: 30
Prep: 15 minutes
Cook: 8 minutes
Bake: 15-18 minutes

Ingredients:
1 tbsp Olive Oil
1 lb Sweet Italian Turkey Sausage
15 Jalapeños, sliced in half then seeded
8 oz Reduced Fat Cream Cheese, softened
4 oz Cheddar Cheese, shredded
1 tsp Dried Basil
2 tsp Cumin
1 tsp Celery Salt
3 Scallions, finely chopped
1/2 lb Bacon, sliced in half (optional)

Directions:
Preheat oven to 450 degrees.
In a large skillet over medium-high heat add in the olive oil and turkey sausage. Cook until turkey is no longer pink, about 8 minutes.
While the the turkey sausage is cooking would be a great time to prep the jalapeños by cutting them in half and using a spoon to scoop out the seeds and the ribs of the pepper.
In a large bowl combine the cream cheese, cheddar cheese, basil, cumin, celery salt and scallions, stir well. Then add the cooked turkey sausage to the cream cheese mixture and stir to combine.
Stuff the jalapeños with the cream cheese-sausage filling and wrap with a 1/2 slice of bacon around the pepper. Place onto a rack over a baking sheet, repeat until all of the jalapeños have been filled.
Bake the peppers for 15-18 minutes or until the jalapeños become tender and the bacon has crisped. Serve and enjoy!

Hey FLMers, if you have not traveled the USA, trying all sorts of wieners, you have missed out! Luckily, for you, I have put many wieners in my mouth, and can tell you the best, and my favorite! TIP: buy true Chicago, Vienna Beef Dogs

Maria makes a Chicago Dog!

When visiting Chicago you will find street carts serving the ever popular Chicago Dog with the works. An all beef hot dog served on a poppy seed bun and not to mention the other 7 ingredients on top.

Serves: 1
Cook: 5 minutes
Prep: 2 minutes

Ingredients:
Vienna Beef Hot Dog
Poppy Seed Bun, steamed
Classic Yellow Mustard
Pickled Relish
White Onion, finely chopped
Fresh Tomato
Kosher Pickle Spear
Sport Peppers
Dash of Celery Salt

Directions:
Place the hot dog into simmering water and simmer until the hot dog reaches an internal temperature of 170-180 degrees.

Assemble the "Chicago Dog" by placing the hot dog into the poppy seed bun and placing the remaining ingredients onto the hot dog. Enjoy!
