In my eyes, she looks at most 15 (maybe 16)
I 100 percent swear she does not look over the age of 16

Céleste Brunnquell was born Jul 24, 2002. Filming dates are listed on IMDb as Jun 2, 2021 - Jul 16, 2021. If correct she was 18, a week shy of 19 when shooting wrapped.

They filmed a movie in six weeks?
Yeah, they can do that. Some movies are filmed even faster. But then you have post-production, which normally takes far longer than the shoot itself. Film festivals have a submission deadline months ahead of the festival dates. You need to have a completed version for whatever committee reviews them. So it can be six months to a year following the end of filming before the public gets to see your movie.
In the case of a theatrical release you have to get a distribution deal, which means showing it around after post-production is complete to various studios and then (when a contract is signed) producing and sending out to theaters actual film copies, or these days more commonly a Digital Cinema Package (DCP). A year or more delay is common between filming and the public getting to see the finished product in a theater, or even on streaming.
Occasionally movies get stuck in development hell. They are filmed, but then the director runs out of money to do post-production, or some other problem derails the release and it shows up only years later. El sueño de Tánger (1991) was filmed between May and August of 1985, when female lead Maribel Verdú was 14. It sat on the shelf for six years and Maribel was 20 by the time it saw the light of day. My point being the delay between shooting and premiere is mostly due to other factors, time on set is often the shortest phase of the moviemaking process. Films with a lot of stunt sequences, thousands of extras (like Lord of the Rings), or which use a lot of special effects and prosthetic makeup, can take a whole lot longer to film. A movie with none of that can go through principal photography pretty quickly though.
